The Department of Food and Nutrition is one of the six departments at the Faculty of Agriculture and Forestry. POSTDOCTORAL RESEARCHER IN MYCOTOXIN RESEARCH

Mycotoxins are toxic secondary metabolites produced by fungi, which contaminate various agricultural commodities either before harvest or during post-harvest operations. Mycotoxin management methods used in developed countries cannot be used in developing countries due to lack of funds and food insecurity. Currently there is no feasible post-harvest method to sufficiently detoxify contaminated grains to ensure their safety for human consumption. Biological control methods are considered forefront to solve this problem and have been extensively studied. However, we are still lacking fundamental information about mechanisms of detoxification and efficacy of the detoxification processes in the very complex food matrix. The Powergrain project therefore aims to explore the efficacy of cereal fibre in minimizing the bioaccessibility of mycotoxins. The project will involve implementation of in-vitro methods to study mycotoxin binding and furthermore in vivo studies using rats.

We are looking for a highly motivated and skilled postdoctoral researcher who holds a doctoral degree in a relevant field. A background in mycotoxin chemistry (extraction and analysis), in vitro mycotoxin binding methods, LC-MS analysis of mycotoxins and knowledge of cereal fibres will be an advantage.

A successful candidate should be able to:
1. Identify, design, conduct, and report research on mycotoxin binding in cereal based matrices
2. Plan and prepare samples for in vivo tests on mycotoxin binding
3. Contribute to the master and doctoral student supervision and teaching
4. Contribute to proposal writing
5. Engage with scientific community, research partners and the wider public, internationally and domestically through interaction and scientific publications.

Requirements:
Education, experience and technical skills:
• Doctoral degree, knowledge, and experience in mycotoxin chemistry and food science
• Knowledge of invitro and invivo methods to study mycotoxin binding
• Experience in student supervision
• Fluency in English and excellent writing skills

Personal attributes and competencies:
• Excellent analytical and innovative research planning skills
• Excellent interpersonal and communication skills, experienced in working within multicultural and multidisciplinary research teams
• High motivation for academic research, having initiative and capable of working independently as well as in team environment

The salary of the successful candidate will be based on level 5 of the demands level chart for teaching and research personnel in the salary system of Finnish universities. In addition, the appointee will be paid a salary component based on personal performance. The starting salary will be ca. 3100-3500 euros/month, depending on the appointee’s qualifications and experience.
